Good afternoon everyone and Welcome to yet another edition to Recipe-Lovers. I would like to extend a warm welcome to all of the newest members that have joined us and a great big thank you to all of you who continue to support me.
I hope you are having a wonderful week. Sorry I have not been publishing lately. We have been swamped between the runny noses, tummy aches and running here and there trying to get things done. The kids seem on the mend. They still have a stuffy nose but nobody has complained of a tummy ache today. What a relief! Other that that we have just been extremely busy with life. Amazing how that happens when you least expect it. One day you feel like you have done nothing and the next, Wow! And speaking of busy, I better get going. It is almost time to start supper so I can get Samantha to Brownies tonight.

This recipe is wonderful served with rice or noodles and a tossed salad.
Chicken Diane
6 boneless, skinless chicken thighs or breast halves 1/4 cup butter 1 medium onion, chopped fine 1/3 cup fresh parsley 1/4 cup steak sauce 1/4 cup dry sherry 1 tablespoon Worcestershire sauce 1 tablespoon Dijon-style mustard
In a large skillet, heat half of the butter over medium heat until bubbly and hot. Add the chicken and cook, turning frequently until lightly browned on all sides and, when pierced with a fork, juices run clear. Remove the chicken to a warm plate and keep warm. In the same skillet, heat the remaining butter. Add the onion and sauté until translucent, approximately 2 minutes or less. Reduce the heat and add the remaining ingredients, except for the chicken. Cook; stirring occasionally; until heated through. Easy Valentine Cheesecake
Graham cracker pie shell 1 can cherry or strawberry fruit pie filling or topping 8 ounce cream cheese, softened 8 ounce non-dairy whipped topping 1/4 cup powdered sugar

Raisin Whole Wheat Bread
2 cups all purpose flour 1-1/2 cups whole wheat flour 1 tablespoon baking powder 3 tablespoons granulated brown sugar 2 teaspoons caraway seeds 1/2 teaspoon salt 3 tablespoons golden raisins, chopped One 12 ounce can light beer, at room temperature 1/4 cup egg substitute Vegetable cooking spray
In a large mixing bowl combine the first 7 ingredients, make a well in the center of the mixture. Add the beer and egg substitute, stirring until the dry ingredients are moistened. Spoon the batter into a 8-1/2 x 4-1/2 x 3-inch loaf pan coated with nonstick cooking spray. Bake at 375-degrees for 45 to 50 minutes or until a toothpick inserted into the center comes out clean. This recipe makes a wonderful Valentines salad.
Valentine Fruit Salad
1 can pears 1/2 cup cinnamon red hots 3 tablespoons vinegar Lettuce 1 can sliced pineapple 1/2 cup nuts, chopped 1-1/2 cups cream mayonnaise, recipe below
Drain the pears, to pear syrup add the cinnamon red hots and vinegar, bring to a boil. Trim each pear half into heart shape and simmer in the syrup 20 minutes, remove from heat and refrigerate. Place pear half, hollow side down, on a lettuce leaf. Cut the pineapple in small sections and arrange around pears. Sprinkle the nuts around the edge of the salad to give a lacy effect. Serve the mayonnaise in a separate bowl.

Baked Pork Chops
2 to 4 center cut boneless chops 1/2 cup Italian-style salad dressing or cooking oil 1 cup bread crumbs Salt and pepper to taste
Place the salad dressing or oil in a small flat dish. Place the bread crumbs in another flat dish. Dip both sides of the pork chops into the dressing or oil. Coat the pork chops on both sides with the crumb, salt and pepper mixture. Place the coated pork chops into an oven proof glass pan. Hi, Just wanted to stop by and ask you to please pray for a friend of mine. I just learned that the fiancée of my friend, Allison Bunton, was shot while on duty at the elections in Iraq. He was shot by sniper fire and got shot in the leg, has had surgery and is in the hospital over there. We are not sure just when he may be able to get home, but Please, Please offer your prayers up for his safety. We were all terribly upset to hear this news, he was due to be coming home in just over a month. He and Allison were planning to be married and start their life together. That will still happen, but its joy has been over shadowed by this tragedy. Thank you for your prayers....KT

Swiss Spread
1 (8-ounce) cream cheese, softened 1 cup Swiss cheese, shredded 4 crisp slices bacon or equal amount bacon bits 2 tablespoons green onions, minced 1 teaspoon Worcestershire sauce 2 tablespoons milk

Mango-Papaya Smoothie
1 mango (about 1-1/2 pounds), peeled, pitted, and chopped coarse 1 papaya, peeled, seeded, and chopped coarse 2 cups plain yogurt 2 tablespoons fresh Lime Juice plus 4 Lime slices for garnish 3 tablespoons honey, or to taste 1/4 teaspoon almond extract
Blend the mango, papaya, yogurt, lime juice, honey, almond extract and 1-cup ice cubes in in a blender container in batches until the mixture is smooth. Blend in another 1/2-cup ice cubes if desired to thin the smoothie mixture to desired consistency. Divide the mixture among 4 chilled large glasses and garnish each smoothie with a lime slice. Revive Stale Potato Chips and Crackers Use a crock-pot to revive stale potato chips and crackers. Place them in the pot but do not cover. Glazed Carrots and Onions
3 bouillon cubes, chicken or beef 6 medium carrots, scraped and cut into quarters 12 small onions, peeled or 4 medium onions sliced 1/4 cup butter or margarine 1 tablespoon sugar 2 tablespoons parsley or fresh basil, chopped
In a large saucepan combine 2 of the bouillon cubes with the carrots. Add boiling water to cover; stir to dissolve the bouillon. Cover. Cook for 10 minutes. Add the onions and cook for an additional 6 minutes or until vegetables are just tender. Remove from heat and drain. In a large skillet, melt the butter. Add the remaining bouillon cube and the sugar. Stir until the cube is dissolved. Add the vegetables. Cook until golden brown and glazed, stirring frequently. Transfer to serving dish. Chicken Lickin' Good Pork Chops
6 pork chops, 1-inch thick 1/2 cup flour 1 tablespoon salt 1-1/2 teaspoons dry mustard 1/2 teaspoon garlic powder 2 tablespoons oil 1 can Chicken & Rice soup
Dredge the pork chops in a mixture of flour and seasonings. Brown the hops in oil in a skillet. Drain. Place the chops in a crock pot, and add the soup. Cook on Low 6 to 8 hours. *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*

2 medium zucchinis, sliced thin 2 medium yellow squash, sliced thin 1 green pepper, sliced thin 1 sweet red pepper, sliced thin 1 can diced tomatoes, drained or 2 medium tomatoes 1 small eggplant, sliced thin 1 medium onion, sliced thin 2 cloves garlic 1 teaspoon parsley 1 teaspoon basil 1/8 cup olive oil 1/4 cup Parmesan cheese
In a bowl combine the onions, olive oil, garlic, and herbs. Mix well. Spread half of the mixture in shallow microwave-safe casserole dish. Layer 1/2 of veggies on top of onion mixture. Sprinkle 1/2 of Parmesan cheese on top. Repeat layering, using the other half of the ingredients. Microwave loosely covered for 10 to 15 minutes, then check for doneness. If required, microwave more. Curried Turkey and Biscuits
5 biscuits, prepared from refrigerator dough 1 tablespoon margarine 1 red onion, sliced 1/2 cup mushrooms 1 (10.5 ounce) can of cream of mushroom soup, condensed 1 teaspoon curry powder 1/2 cup sour cream 2-1/2 cups turkey, cubed 1/4 cup parsley, chopped
Prepare the biscuits according to the package directions. In a large skillet over medium heat, melt the margarine and sauté the onions and sliced mushrooms. Stir in the soup, curry powder and sour cream to make a smooth sauce. Add the turkey chunks and the chopped parsley. Continue to simmer until completely heated. Serve over the biscuits. Easy Chocolate Chip Cookies
1 (12-ounce) package of chocolate chips 3/4 cup white sugar 3/4 cup brown sugar firmly packed 1 cup butter or margarine, softened 2 eggs 1 teaspoon vanilla extract 3-3/4 cups off brand pancake mix
Preheat the oven to 375-degrees. In a large bowl combine the brown sugar, white sugar, eggs, butter or margarine and vanilla mix until creamy. Add the pancake mix 1/2-cup at a time until very thick. Stir in the chocolate chips. Drop by spoonfuls onto greased cookie sheet. Low Carb Pancakes
1/3 cup full-fat soy flour 2 cups cottage cheese 1 tablespoon oil 8 eggs 1/3 cup vanilla protein powder 1 tablespoon vanilla 1 teaspoon nutmeg 1 teaspoon cinnamon 3 packets Splenda

Bread Food Coloring Sugar

Good morning everyone and Welcome to yet another edition to Recipe-Lovers. I would like to extend a warm welcome to all of the newest members that have joined us and a great big thank you to all of you who continue to support me.
I hope you had a wonderful weekend. We had some pretty nice weather here. It was a nice weekend for the kids. Spencer won an award at school that is only given out to 1 child in the school. So we told him we would let him have “his” day and he could pick a place to eat out. So Saturday morning he woke up and wanted to go to IHop because Samantha had a free meal for her birthday. Not because he wanted a smiley face pancake. Ok. I believe it. Not! So off we went for smiley pancakes. He wanted to go to the mall and then to the pet store. A few weeks ago one of our Guppies had 12 babies and he wants more fish! So what did we do….it was “Spencers Day” we bought more fish! And too boot…all the females are pregnant! I do believe we will be moving into two tanks very soon. Saturday evening we were off to eat Chinese. Spencer was in the mood for crawfish and shrimp. We may have over did his day a tad but you know….we sure had a good time! Tonight we are off to a musical my daughter is in. This will be a great treat for us. I am really excited about seeing her in the show. I am sure I will have to load my pockets with tissues. For some reason when you see them on stage you tend to get watery eyes. I haven’t exactly figured a cure for that yet. I have to run. I hope you enjoy the recipes!

Shish kabob (SHISH kuh-bob) are chunks of meat, poultry, or seafood that have been marinated and are threaded on a skewer alternately with vegetables and grilled or broiled. Kabobs are versatile and bite-sized which make a quick and delicious meal.
Pork Kabobs
1-1/2 pounds lean, boneless, pork tenderloin 1/2 cup orange juice 1/4 cup wine vinegar 1 clove garlic, minced 1/2 teaspoon oregano, crushed 2 small onions, quartered 1 large bell pepper, cut in 1-inch pieces 1/2 pound fresh mushrooms, washed
Trim the fat and cut the pork into 1-inch cubes. In a bowl combine the juice, vinegar, garlic and oregano. Place the pork, onion, pepper and mushrooms in a bowl; add the marinade, cover and marinate for 2 hours at room temperature. Put the pork and vegetables alternately on skewers; grill over medium heat, turning frequently. Baste with marinade every 12 to 15 minutes or until meat is done. Serves: 6. Apple Crumb Pie
2-1/2 to 3 pounds baking apples 1/2 cup sugar 1 teaspoon cinnamon Dash nutmeg
Crumb topping: 1/2 cup sugar 3/4 cup All Purpose Flour 1/3 cup margarine or butter, softened
Pare apples and cut into eights. Arrange in a 9-inch deep dish pie pan. Mix 1/2-cup sugar, 1 tsp. cinnamon and nutmeg together. Sprinkle over apples. Crumb topping: Mix 1/2-cup sugar and 3/4-cup flour together in medium size bowl. Cut in the softened margarine or butter with two knives or pastry cutter until mixture is crumbly. Sprinkle over apples. Bake in oven at 350- degrees for 1 hour or until the top is lightly golden and bubbly and the apples are soft. One-Pan Potatoes & Chicken Dijon
4 medium potatoes, sliced 1/4-inch thick 1 pound boned and skinned chicken breasts, sliced 1/2-inch thick 2 tablespoons vegetable oil 1/4 cup prepared honey-Dijon barbecue sauce 1 teaspoon dried tarragon
Microwave the potato slices for 8 to 10 minutes, or until tender. While the potatoes cook, in a large skillet toss and brown the chicken in oil over high heat for 5 minutes. Broccoli and Cheese Custard
1 bunch broccoli 1/4 cup butter 3 eggs 2/3 cup milk 1/4 cups Cheddar cheese, grated 1/8 teaspoon ground black pepper
Cook the broccoli for 10 minute. Drain and place the broccoli in a shallow buttered casserole dish. In a blender container; blend the eggs, milk, cheese and pepper; pour the mixture over the broccoli. Set the dish in a pan of water, and place in oven to bake. 2 pounds lamb, boneless; cubed, browned & drained 2 teaspoon salt 1/4 teaspoon pepper 2 cup water 1 small bay leaf 2 medium carrots; pared & cut in 1/2-inch slices 2 small onions, thinly sliced 4 medium potatoes, pared & quartered 1/4 cup Quick-cooking tapioca; (opt) 10 ounce Peas, frozen; or 10 ounce Mixed vegetables, frozen
Season the cubed lamb with salt and pepper and add to crock pot. Add the remaining ingredients except for the peas. (If you do not want the gravy thickened omit the tapioca). Stir well. Combine all of the ingredients together and mix well. Pour into a microwave safe pie plate that has been sprayed with non-stick spray. Place the pie pan on an inverted saucer. Chocolate Easter Cream-Filled Eggs
1 cup butter, softened 1/2 teaspoon salt 4 teaspoons vanilla 1 can sweetened condensed milk 10 cups icing sugar Brown Sugar, for dusting 1 teaspoon yellow food coloring 1 pound semisweet chocolate
In a large bowl beat the butter, salt and vanilla until fluffy. Add the sweetened condensed milk, and beat in icing sugar. Blend until stiff. Dust with brown sugar. Knead until smooth. Set aside about 2/3 of the mixture. To the remaining mixture add yellow food coloring. Blend in well. Divide the yellow and white into 16 or 24 pieces. Shape the yellow into a ball, mould white around yellow to form an egg shape. Dry at room temperature on paper towels for 24 hours. Melt chocolate in double boiler and dip eggs in chocolate. Preheat a flat skillet and spray with butter-flavored cooking spray. In a bowl lightly mix all ingredients with a fork; let stand for 3 minutes. Use a 1/4-cup measure to pour the batter onto the skillet and cook on both sides until done. Venison and Cream Cheese Hors d'oeuvres
1 (8-ounce) package cream cheese, softened 2 tablespoons butter, softened 2 tablespoons milk 2 cups venison, cooked and shredded 1/8 teaspoon pepper 1/2 teaspoon salt 1 8-ounce can refrigerated crescent dinner rolls
In a mixing bowl combine the cream cheese and butter, beat on medium speed of an electric mixer until smooth. Add the milk, beat until smooth. Stir in the venison, pepper and salt. Roll out the dough on a lightly floured surface into one large rectangle. Roll as thin as possible without tearing. Cut the dough into 2-1/2 inch squares, place a spoonful of the venison mixture into each square. Fold over and press the edges together. Place on cookie sheet. Good morning everyone and Welcome to yet another edition to Recipe-Lovers. I would like to extend a warm welcome to all of the newest members that have joined us and a great big thank you to all of you who continue to support me.
I hope you had a wonderful weekend. We really didn’t do a lot here. Samantha was out of school a couple days last week with an ear infection. She is doing much better now. We finally have the great weather we have been wanting however today it is suppose to start raining. Spencer came in from school the other day and wanted to call a girl at school. We told him he had to be at least 7 before he could use the phone. He said he really needs to have a discussion with her. I told him you are not even 6 yet you will have to talk with her at school. He promptly replied that he needed the keys, that he will drive to her house since I do not know how to get there. I do believe now might be a good time to hide the phone and the keys. I can just see him taking off to have this discussion that is so important. I asked what it was about and he said she is teasing him and not being to nice. He wants to know why. Now funny thing, she gave him her phone number. Sounds like puppy love in the making to me.
I have had members write and ask me about my publishing schedule. Some not so pleasant and others very understanding. When I resumed publishing I pulled back to a couple times a week. However, I do have a family that I have to place first as well as other issues. I plan to increase the publishing when time allows but here lately I have been swamped. Sorry for the inconvenience and I appreciate your continued support.

Sweet and Sour Pork
2 pounds pork boneless top loin Vegetable oil 1/2 cup all-purpose flour 1/4 cup cornstarch 1/2 cup cold water 1 teaspoon salt 1 egg 1 can (20-ounces) pineapple chunks in syrup, drained, reserve syrup 1/2 cup packed brown sugar 1/2 cup vinegar 1 teaspoon salt 2 teaspoon soy sauce 2 carrots, cut diagonally into thin slices 1 clove garlic, finely chopped 2 tablespoons cornstarch 2 tablespoons cold water 1 green pepper, cut into 3/4-inch pieces
Trim the excess fat from the pork; cut the pork into 3/4-inch pieces. Heat 1-inch of oil in a Dutch oven or deep fryer to 360-degrees. In a bowl combine the flour, 1/4-cup cornstarch, 1/2-cup cold water, 1-teaspoon salt and the egg with hand beater until smooth. Stir pork into batter until well coated. Add the pork pieces, one at a time to the oil. Fry approximately 20 pieces at a time, turning 2 or 3 times, until golden brown. Drain and keep warm. Add enough water to the reserved pineapple syrup to measure 1- cup. Heat the syrup mixture, brown sugar, vinegar, 1- teaspoon salt, soy sauce, carrots and garlic to boiling in Dutch oven; reduce heat. Cover and simmer until the carrots are crisp tender. Approximately 6 minutes. Mix 2-tablespoons cornstarch and 2- tablespoons cold water; stir into the sauce. Add the pork, pineapple and green peppers. Heat to boiling, stirring constantly. Coconut Cake
1 package yellow cake mix 1 package vanilla instant pudding mix 1-3/4 cups Sprite soda pop 4 eggs 1/4 cup oil 2 cups coconut 1 cup chopped pecans
Grease and flour 2 layer cake pans. In a large mixing bowl, blend the cake mix, pudding mix, Sprite, eggs and oil Beat at high speed for 4 minutes. Saint Patrick's Day Irish Soda Bread
3 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 12 tablespoons cold unsalted butter, cut into small pieces 1-1/2 cups raisins 1 egg 1/2 cup honey 1 cup buttermilk
Preheat the oven to 350-degrees. Butter a heavy (10-inch to 11-inch and 2-inch or 3-inch deep.) skillet or casserole dish. In a large bowl sift the flour, baking powder, baking soda and salt together. Cut in the butter until the mixture resembles peas. Add the raisins and toss to distribute evenly. In another bowl beat the egg until very frothy. Beat in the honey. Beat in the buttermilk. Gradually stir the mixture into the flour. Pour the mixture into the prepared pan. 1 large package orange jell-o 3 cups boiling water 4 teaspoons vinegar 4 teaspoons sugar Dash salt 2 cups crushed pineapple, drained 1 cup grated Cheddar or American cheese 1 cup Cool Whip

Creamy Baked Chicken Breasts
4 whole chicken breasts, split, skinned, and boned 8 (4 x 4 inch) slices of Swiss cheese 1 (l0-3/4 ounce) can cream of chicken soup, undiluted 1/4 cup dry white wine 1 cup herb-seasoned stuffing mix, crushed 1/4 cup butter or margarine, melted
Arrange the chicken in a lightly greased 13 x 9 x 2-inch baking dish. Top with the cheese slices. In a bowl combine the soup and wine, stirring well. Spoon the sauce evenly over the chicken and sprinkle with the stuffing mix. Drizzle the butter over the crumbs; bake at 350-degrees for 45 to 55 minutes. 4 ounces Blue cheese, softened 4 ounces cream cheese, softened 2 tablespoons butter 2 tablespoons sherry 1/4 cup English walnuts, chopped

7 ounces instant white rice 1 pound Velveeta cheese 1 package frozen, chopped broccoli 2 eggs 2/3 cup milk 1/2 cup cooking oil 1 medium white onion, chopped 1 cloves garlic, chopped or equivalent in dehydrated 1 can cream of mushroom soup
Cook the rice according to package directions. Cut the cheese into 1-1/2 inch cubes. Cook the broccoli for several minutes. Combine all of the ingredients into a large mixing bowl, stir until mixed. Pasta Skillet Dinner
1 pound Lean ground beef 3 cups Mostacciolli, uncooked 1 jar (28 ounces) spaghetti sauce 8 ounces mozzarella cheese, shredded 1/4 cup parmesan cheese, grated
In a large skillet brown the meat. Remove from heat and drain the excess fat. Add 2-1/2 cups water and bring to a boil. Reduce the heat and stir in the pasta. Cover the skillet and simmer for 15 minutes or until pasta is tender. Stir in the spaghetti sauce and 1-cup of Mozzarella cheese. Sprinkle with remaining the cheeses and cover. Cook for 3 minutes or until cheese is melted. Serves: 6. Crispy Easter Nests
1 (7-ounce) Marshmallow Crème 1/4 cup Creamy peanut butter 2 tablespoons butter or margarine; melted 5 ounce Chow mein noodles 1 cup M&M Plain Candies; chopped Assorted candies (jelly beans, small Easter eggs, etc.)
Combine the Marshmallow Crème, peanut butter, and butter; mix until well blended. Add the noodles and chopped plain chocolate candies; mix well. Drop by rounded tablespoonfuls onto a greased cookie sheet; shape with greased fingers to form nests. Let stand until firm. Dust the bottoms of the nests with confectioner's sugar, if desired. Preheat oven to 425-degrees. In a large bowl, combine all ingredients (except pie crust) and whisk to mix well. Pour the mixture into pie crust shell. Bake for 15 minutes. In a large stock pot, sauté the onions, peppers and garlic until tender. Add the remaining ingredients, and stir to blend. Cover and simmer for 20 to 30 minutes. Makes 8 cups. Good morning everyone and Welcome to yet another edition to Recipe-Lovers. I would like to extend a warm welcome to all of the newest members that have joined us and a great big thank you to all of you who continue to support me.
I hope you are having a wonderful week. It is pouring here! I am hoping to get this out to you before the lightening starts up but I hear it is suppose to be very nasty out today. I have one little guy home sick today. It seems this respiratory stuff just never ends. I am ready for summer. I am going to get into the newsletter quick today, have to beat the storm. If you haven’t been to the site lately, please stop by. I have been very busy over there. I have added recipes, pages, reworked pages like the Archives. Completely re-done. I am not done yet. I am so excited about the changes. It took months to figure out something I was trying to do to add pages. For some reason that one step I kept missing just wouldn’t not make things work. The other day I was sitting here thinking what in the world and all of a sudden it was like someone turned the smart bulb on and it worked! I found what I was doing wrong and got it. I keep telling my husband “aren’t you proud of me, I did it!” I was doing cart wheels. I am so glad you weren’t a mouse in the corner you probably would have run for the hills. I have to get busy.

Succulent salmon, fresh vegetables, lettuce and chives wrapped in a tortilla make a great lunch or quick and satisfying supper.
Wrap-It-Up Alaska Salmon Sandwich
1 can (14.75) Alaska salmon, drained and chunked 1 container (8-oz.) whipped cream cheese, regular or light 2 tablespoons chopped fresh chives 1 tablespoon lemon juice 2 teaspoons dried Italian seasoning, or 2 tablespoons chopped cilantro 1/2 teaspoon onion powder 1/2 teaspoon crushed red pepper flakes 4 (10-in.) large flour tortillas 4 large Romaine or curly lettuce leaves, center ribs removed 4 cups chopped or thinly sliced assorted fresh vegetables*
In bowl, blend salmon, cream cheese, chives, lemon juice, Italian seasoning, onion powder, and pepper flakes. On each of 4 tortillas, divide and spread salmon-cream cheese mixture to within 1/2 inch of edges. Lay a lettuce leaf over each tortilla. Top with one cup vegetables* (such as cucumbers, bean sprouts, tomato, celery, broccoli or shredded carrots or cabbage) placed across middle of tortilla. **Roll up tightly and slice on diagonal. Brownie Pudding
1 cup sifted flour 1 teaspoon baking powder 3/4 cup granulated sugar 2 tablespoons cocoa 1/2 teaspoon salt 1/2 cup milk 1 teaspoon vanilla 2 tablespoons shortening, melted (do not use oil) 3/4 to 1-cup walnuts, chopped 3/4 cup brown sugar 1/4 cup cocoa 1-3/4 cup hot water
In a bowl sift together the flour, baking powder, granulated sugar, 2-tablespoons cocoa and salt. Add the milk, vanilla, and shortening (don't use oil). Mix until smooth. Add the nuts. Pour into a greased 8 x 8 x 2-inch pan. In another bowl, mix the brown sugar and 1/4-cup cocoa. Sprinkle over the batter. Pour hot water over the entire batter. Do Not Stir!!!!! Buttermilk Biscuits
4 cups self rising flour 1/2 teaspoon baking soda 1 cup vegetable shortening 2 cups buttermilk
Preheat the oven to 400-degrees. In a mixing bowl, combine the flour and baking soda. Cut in the shortening with a pastry blender or 2 knives until the mixture resembles coarse cornmeal. Add the buttermilk. Stir until the dough clings together. Turn the dough onto a lightly floured surface, knead lightly for about 15 seconds. Roll or pat the dough to 1/2-inch thickness. Cut into rounds with a 2-inch biscuit cutter. Place on a greased baking sheet. Brush the tops with additional buttermilk, if desired. Bake for 12 minutes. Asian Chicken Salad with Roasted Peanuts
3/4 cup bottled Asian-style dressing 1/4 cup fresh cilantro, chopped 2 tablespoons fresh ginger, chopped 1 (6-ounce) package baby spinach leaves 2 cups mixed red, yellow and green bell peppers, sliced 1 (2 to 2-1/2 pound) rotisserie chicken, meat torn into bite-size pieces (about 4-cups) 1/2 cup honey-roasted peanuts 1 mango, peeled, pitted, sliced
In a small bowl combine the dressing, cilantro, and ginger and mix well. Toss the spinach, peppers, chicken, and nuts in large salad bowl with enough of the dressing mixture to coat. Season to taste with salt and pepper. Divide salad among 4 plates. Top with mango and serve. Hamburger Pie
1 medium onion, chopped 1 pound ground beef Salt and Pepper, to taste 1 (No. 2 can or l/2 pound) green beans, cooked 1 (10-l/2 or 11-ounce) can condensed tomato soup 5 medium potatoes, cooked 1/2 cup warm milk 1 beaten egg
Cook the onion in hot oil until golden; add the meat and seasonings; brown. Add the drained green beans and soup; pour into a greased 1- 1/2 quart casserole dish. In a bowl mash the potatoes; add the milk, egg, and salt and pepper. Spoon in mounds over the meat. Bake at 350-degree for 30 minutes. Here I am again asking for prayer for a friend of mine whose wife [second one] died from a blood clot after an operation on her leg, and being that I'm a great believer in Prayer I will ask your group to once again pray for this man. His stepchildren [who are Adults] are trying to take this man to the cleaners, they not only came into His! House & took furniture etc which was his to begin with before he married this woman, they are also trying to sell His House that belonged to him, It is now in a lawyers hands, also his bank account was frozen & he is going through a very rough time. Pita Pizzas
4 (6 to 8-inch) pita (pocket) breads or pita folds 1/2 cup pizza sauce 1/2 cup onion, finely chopped 1/2 cup green bell pepper, finely chopped 1/2 cup fresh mushrooms, thinly sliced 1 cup Mozzarella cheese, shredded
Preheat the oven to 400-degrees. Place the pita breads on an un-greased cookie sheet. Top pita each with 2-tablespoons pizza sauce, spreading to within 1/2 inch of edges. Top each with onion, bell pepper and mushrooms. Sprinkle each with 1/4-cup cheese. Bake for 15 minutes or until the cheese is melted and lightly browned. Spinach Parmesan
2 packages (10-ounce each) frozen chopped spinach 1/2 cup boiling water 1 package (8-ounce) cream cheese, softened 1/2 cup milk 1/2 cup Parmesan cheese 1/2 teaspoon paprika
In a saucepan cook the spinach in the water. Remove from heat and drain well. Place the spinach into a buttered, 1-quart oven-proof serving dish. In a bowl combine the cream cheese, milk and 2-tablespoons of the Parmesan cheese. Spread the mixture over the spinach. Sprinkle with the paprika and the remainder of the Parmesan cheese. Hungarian Goulash
2 pounds round steak, cubes 1 teaspoon paprika 1 cup onion, chopped 1 teaspoon thyme, dried 1 clove garlic, minced 1 bay leaf 2 tablespoons flour 14-1/2 ounce tomatoes 1 teaspoon salt 1 cup sour cream 1 teaspoon pepper
Put the steak cubes, onions, garlic in the crock pot. Stir in the flour and mix to coat the steak cubes. Add all of the remaining ingredients except for the sour cream. Stir well. Cover and cook on Low for 8 to 10 hours. Add the sour cream 30 minutes before serving. Blueberry Parfaits
1 cup Blueberries 1/4 cup Apricot preserves 1 pint Yogurt, frozen, vanilla 4 tablespoons Almonds, slivered (optional)
In a small microwave safe bowl, combine the blueberries and preserves. Place in the microwave, cook on High for 3-3-1/2 minutes, stirring twice, until blueberries are softened. Cover and refrigerate until ready to assemble. To serve, in each of 4 dessert or parfait glasses layer frozen yogurt and blueberry sauce. Garnish with almonds. Vegetable Soup
8 ounces ground chuck 7 cups tomatoes, peeled and chopped 4 cups water 1 (14.5) ounce can cut green beans, drained and rinsed 1 (15-ounce) can peas, drained and rinsed 1 (15.25) ounce can corn, drained and rinsed 2 carrots, peeled and chopped 3 potatoes, peeled and diced 1 medium onion, diced 1/4 cup dry rice 1/8 teaspoon black pepper 1/8 teaspoon red pepper flakes 1/2 teaspoon salt 1/2 teaspoon garlic powder
Place the ground chuck in a 2-gallon stock pot and brown over medium heat. Remove the meat and drain it well. Clean the meat drippings from the stock pot. Return the meat to the stock pot and add the tomatoes and water. Bring the mixture to a simmer and cook 20 minutes or until the tomatoes are soft and a juicy broth is created. Add the remaining ingredients, cover and continue cooking for an additional 60 minutes. Makes 14 (8-ounce) servings. Venison Meatball Appetizers
1-1/2 pounds ground venison 1/3 cup fresh bread crumbs 1/3 cup green onion, finely chopped 1/4 cup catsup 1 egg 1/4 teaspoon salt 1/4 teaspoon basil 1/8 teaspoon pepper
In a bowl combine all of the ingredients. Mix well. Shape into 36 meatballs. Place the meatballs into a 9 x 13-inch baking pan. Bake at 400-degrees for 15 to 20 minutes. Drain. Serve with spaghetti sauce for an entrée or use as an appetizer with sauce recipe below.
Meatball Sauce:
1 (12-ounce) bottle chili sauce 1 (10-ounce) jar grape or currant jelly Juice of one lemon 1/2 teaspoon prepared mustard
In a saucepan combine all of the ingredients. Add the meatballs. Simmer until thoroughly heated. Transfer to a chafing dish and serve with cocktail picks. Note: If you need to double or triple recipe for a large party, use half ground venison and half ground beef. Freezes well. Defrost in refrigerator overnight. Mustard Chicken
4 chicken breasts with or w/o skin 3 tablespoons olive oil (or any oil) 2 cloves garlic, minced 3 tablespoons white wine 3 tablespoons soy sauce 2 tablespoons Dijon mustard
In a large skillet heat the oil, add the garlic and cook, stirring, for 3 minutes. Add the chicken breasts and cook until browned. In a small bowl combine the wine, soy sauce and mustard and mix well. Pour the mixture over the chicken. Bake at 325-degrees until done (approximately 20 minutes). Spoon the drippings over the chicken when serving. Tofu Veggie Lasagna
3 cloves garlic, chopped 1-1/2 teaspoons dried basil 1 teaspoon dried Italian seasoning 1/4 teaspoon salt 10 ounces chopped frozen spinach, thawed and drained 1/2 cup shredded carrot 1 large can pasta sauce 6 pieces no cook lasagna noodles 4 ounces shredded Mozzarella cheese (soy or regular) 1 pound firm tofu 1 tablespoon Parmesan Cheese (soy or regular)
Preheat the oven to 450-degrees. Process the garlic and tofu in a food processor, pulse until smooth. Add the basil, Italian seasoning and salt; pulse a few times to blend. Transfer the mixture to a bowl and add the drained spinach, carrots and Parmesan cheese. Mix well. Spread 1/2-cup of the sauce on the bottom of an 8-inch square baking pan. Arrange 2 noodles over the sauce. Top with the tofu, followed by 3/4-cup sauce. Repeat with the remaining noodles, tofu and sauce. End with the noodles, topped by sauce and Mozzarella cheese. Good afternoon everyone and Welcome to yet another edition to Recipe-Lovers. I would like to extend a warm welcome to all of the newest members that have joined us and a great big thank you to all of you who continue to support me.
I hope you are having a wonderful week. We have been staying busy as usual. Yesterday I went to the dentist. Ouch! That is about all I can say this morning. I had a root canal done and then he decided hey since your numb why not do some more work. So this morning I am not exactly a happy camper. Stuart is sick today as well. I sure wish the weather would make up its mind so these kids can get over this stuff. Short of all that we are doing pretty good. I had student conferences last night. Of course I had let it slip my mind and fortunately one of the teachers called so both teachers waited for me. You know, you kind of worry when they say they will wait on you. But happy to report all went great! This afternoon I have one last conference to go to and that should do it. I don’t know about you but even though I know the kids are doing well in school and they are good kids I still feel like I am being sent to the principals office when it comes to conference time. But I love the feeling when I walk out and find out all went well. It is hard to believe in a short few months school will be over. I am already planning up the summer. And Samantha told me she has a dollar in her room and wanted to let me know she is going to start spending money. I had to laugh. Just how much money is this 7 year old going to start spending? I have to get going if this is going to get out to you today.

Baked Ziti with Ground Beef
1 pound lean ground beef 1/2 cup onion, chopped 1 green bell pepper, chopped, about 1/2 cup 1 can (14.5 ounces) diced tomatoes, un-drained 1 can (8 ounces) tomato sauce 1/2 teaspoon dried leaf basil, crumbled 1/2 teaspoon dried leaf oregano, crumbled 1/2 teaspoon garlic powder or small clove garlic, minced 1 1/2 teaspoon salt 1/4 teaspoon pepper 8 ounces ziti or elbow macaroni, cooked and drained 2 cups (8 ounces) shredded Mozzarella cheese, divided
Cook noodles and drain. In a large skillet sauté the ground beef, onion, and green bell pepper until the onion is tender and beef is lightly browned. Drain off excess fat; add the tomatoes, tomato sauce, basil, oregano, garlic powder, salt, and pepper. Stir well; stir in the ziti or elbow macaroni and 1- cup of cheese; transfer to a 2-1/2 quart casserole dish. Top with the remaining cup of cheese. Brownie Caramel Walnut Pie
1 (9-inch) pie shell, unbaked 1/2 cup walnuts, chopped 20 caramels, unwrapped 1 (14-ounce) can sweetened condensed milk 1 egg, beaten 2 tablespoons margarine or butter, melted 1 (6-ounce) package semi-sweet chocolate chips, melted
Preheat the oven to 325-degrees. Sprinkle the nuts into the pie shell. In a small saucepan, over low heat, melt the caramels with 2/3-cup condensed milk. Spoon the mixture over the walnuts. In a bowl, combine the egg, margarine and remaining milk; mix well. Stir in the melted chips. Pour the mixture over the caramel layer. Bake for 35 minutes or until the center is set. Cool. Potato Bread
3 or 4 large potatoes 2 packages dry yeast 1/4 cup warm water 1/2 cup sugar 2 tablespoons salt 1/2 cup shortening, melted 4 cups of scaled milk, cooled 4 to 6 cups of flour or more
Dissolve the yeast in warm water. Peel and cook the potatoes. Drain and save the potato water. Mash the potatoes until fluffy. Add the potato water, sugar, salt, yeast, shortening and milk. Add enough flour to make a thick sponge. Let set overnight in a warm place. In the morning add enough flour to make a dough that isn't sticky. Make into loaves, biscuits, or rolls. Let the rise for about 1 hour in a warm draft free place. Bake at 350-degrees for 40 minutes for rolls and biscuits, about 1 hour for loaves. 1 head lettuce, torn 1/2 cup celery, chopped 1/2 cup green pepper, diced 1 red onion, chopped 1 package frozen baby green peas, slightly thawed 1 cup mayonnaise 2 teaspoon sugar or honey 4 ounce Cheddar cheese, grated 8 slices bacon, crumbled
Layer the first 5 ingredients in a glass bowl in the order listed. Spread the mayonnaise evenly over the top. Sprinkle on the sugar or honey, then cheese, then bacon. Baked Chicken Parmesan
5 tablespoons unsalted butter, melted 1 tablespoon Dijon or dry mustard 3/4 cup dried bread crumbs 1/2 cup Parmesan cheese, freshly grated 2 tablespoons fresh parsley, chopped 1 teaspoon dried basil 8 Chicken thighs, or 3 whole chicken breasts, bone in, split.
Preheat the oven to 400-degrees. Lightly grease a 9 x 15-inch baking dish. In a shallow bowl, combine the butter with the mustard. In another shallow bowl, blend together the bread crumbs, cheese, parsley, and basil. Dip the chicken pieces first into the mustard mixture, and then coat with the bread crumb mixture. My granddaughter was diagnosed with cellulitis. It is on her fore head. Which is not good. The Dr. thought it might be shingles but I don't think so. My Mom had this and passed on. She is only 16. Broccoli Casserole
2 packages frozen broccoli cooked 1 can cream of celery soup 1 stick butter/margarine, melted 1 sleeve Ritz crackers, crushed 2 cups Cheddar cheese, shredded
Layer broccoli in 13 x 9 pan. Sprinkle with cheese. Mix Ritz crackers with butter. Spoon over top of broccoli and cheese mixture. Spoon celery soup over all. bake at 350 degrees for 30 minutes. P.S. Low Carb Provencale
4 boneless skinless chicken breasts 2 teaspoons dried basil 1/4 teaspoon salt, divided 1/4 teaspoon pepper, divided 1 cup diced yellow bell pepper 1 (16-ounce) can navy beans, rinsed and drained 1 (14-ounce) can diced tomatoes, un-drained
Place the chicken breasts into the crock pot and sprinkle with the basil, 1/8-teaspoon of salt and 1/8-teaspoon of pepper. In a large bowl, combine the bell pepper, navy beans, diced tomatoes, salt and pepper. Spread the vegetable mixture evenly over the chicken. Cover and cook on High for 1 hour. Reduce the heat to Low and continue cooking for 5 hours. When ready to serve, create a bed with the bean mixture in a shallow serving dish. 1 pound eggplant; cut in 1/2-inch thick pieces 15 ounce can tomato sauce 1 garlic clove, minced| 1/2 teaspoon basil 1/2 cup Mozzarella cheese, shredded
Arrange the eggplant slices in a single layer in an 11 x 7-inch microwave-safe dish. In a small bowl, combine the tomato sauce, garlic and basil. Mix well. Pour over the eggplant. Cover tightly. Microwave on High for 8 to 10 minutes or until the eggplant is tender. Sprinkle with the cheese. Let stand for 5 minutes. If necessary, microwave High for 1 minute to melt cheese. Skillet Dinner
4 medium potatoes, sliced 1/4-inch thick 16 ounces London broil, thinly sliced 1 tablespoon garlic powder 2 tablespoons olive oil 1 green bell pepper, cut into thin strips
Microwave the sliced potatoes for 6 to 10 minutes or until tender. While the potatoes cook in the microwave, toss the beef with the garlic pepper. In a large skillet heat the oil over high heat. Add the beef to the skillet and toss for 3 minutes. Remove the beef and add the green pepper to the skillet; toss for 3 minutes. Add the potatoes; sauté for 5 minutes with the peppers. Add the beef and toss until heated through. Serves: 5. 3 envelopes unflavored gelatin 1-1/4 cups water, divided 1-1/2 cups sugar 1/4 teaspoon peppermint extract Food coloring
In a small bowl, sprinkle the gelatin over 1/2-cup water; let stand for 5 minutes. In a saucepan, bring the sugar and the remaining water to a boil over medium heat, stirring constantly. Add the gelatin; reduce the heat. Simmer and stir for 5 minutes. Remove from the heat and stir in the extract. Divide the mixture into two bowls; add 4 drops any color food coloring to one bowl and 4 drops of another color to the other (use red and green for Christmas, yellow and blue for Spring, and so on). Pour into two greased 8 x 4 x 2-inch loaf pans. Refrigerate for 3 hours or until firm. Loosen the edges from pan with a knife; turn onto a sugared board. Cut into 1/2-inch cubes; roll in sugar. Let stand at room temperature, uncovered, for 3 to 4 hours, turning every hour so all sides dry. Cover and chill. Yield: about one pound (16 servings). Easy Chicken and Dressing for Two
2 chicken breasts 1 quart day old bread, torn into large pieces 1 egg, slightly beaten 1 small onion 1 tablespoon celery, finely chopped 1/4 teaspoon baking powder 1/2-2 cups chicken broth Salt & pepper to taste
Combine the day old bread, egg, onion, celery, baking powder, chicken broth. Mix well and pour into well greased 2-quart casserole dish. Place the chicken pieces on top of the mixture. Lightly salt and pepper. Cover tightly with foil. Bake at 350-degrees for 1- 1/2 to 2 hours, removing the foil for the last 30 minutes. Good afternoon everyone and Welcome to yet another edition to Recipe-Lovers. I would like to extend a warm welcome to all of the newest members that have joined us and a great big thank you to all of you who continue to support me.
I hope you are having a wonderful weekend. It is raining here but we have stayed strong and braved shopping all morning. I just needed a pair of jeans at the mall. I have to say that was the most entertaining trip I have tacken yet. Not only did they have too many jeans to pick from but I took the four kids with me. Now they did pretty good until the cell phone wrang. That was like a green light for them to start pushing and pulling and just clowning around. Meanwhile I am trying to talk on the phone, shop and grab kids from under the rack. Oh my! So glad to be home. I have a small break before I have to pick Samantha up from a birthday party. I took her to the party and you guessed it took the boys shopping. They were absolutely wonderful. I think it had something to do with the cookies I picked up for them at the very start of it. Sirloin Steak with Herbs
4-1/2 to 5 pounds sirloin steak about 1-1/2 inch thick, room temperature 1 clove garlic, split 1/3 cup olive or salad oil 1-1/2 teaspoons salt 1/2 teaspoon coarsely cracked pepper 1-1/4 teaspoons dried rosemary leaves 1/2 cup dry red wine 1 tablespoon butter or margarine
Preheat the oven to 350-degrees. Wipe the steak with damp paper towels. Rub each side with garlic; reserve the garlic. Heat the oil in a large, heavy skillet until very hot. Over high heat, brown the steak very well on both sides, 3 to 5 minutes per side. Place the steak on a rack in a shallow roasting pan. Sprinkle with salt, pepper, and rosemary. Add the garlic. Insert meat thermometer in side of steak, making sure point is as close to center of meat as possible. Bake in top part of oven, 25 to 30 minutes, or until meat thermometer registers 130-degrees for medium-rare. Remove thermometer. Place steak on hot platter. Pour off excess fat from roasting pan. Discard the garlic. Add wine to pan, and bring to boiling, stirring to loosen brown bits. Stir in the butter. Pour 2 tablespoons sauce over steak; pass the remaining. This torte is really elegant and easy to prepare. You can make it days in advance and store it in the freezer until ready to use. Be sure to remove from freezer 20 minutes prior to serving.
Chocolate Lover's Torte
3 eggs, separated 1/4 cup all-purpose flour 1 teaspoon baking powder 3 tablespoon granulated sugar
Filling: 6 egg whites 1 cup butter, room temperature 1 cup powdered sugar 1 tablespoon dark rum 6 egg yolks 12 ounce milk chocolate chips, melted
Grease and flour the bottom and sides of a 10-inch springform pan. In large bowl, beat the egg whites until stiff. In a small bowl, beat yolks and sugar. Add the flour and baking powder. Fold the yolks into the whites. Pour the batter into pan. Bake at 350-degrees for 15 to 20 minutes or until golden. To prepare the filling: In a bowl, whip the egg whites until stiff; set aside. In a small bowl, beat the butter, powdered sugar and rum until light. Add the egg yolks, one at a time, and beat until light and lemon colored. Add the melted chocolate. Fold in the egg whites. After base of cake is baked, dip the vanilla wafers into rum to moisten. Place them with top side out, standing upright around cake base (to make pretty edge of torte). Pour the filling onto the base. Top with the whipped cream. Freeze for at least 1 hour before serving. Garnish with vanilla wafers and whipped cream, if desired, and sprinkle with rum. Serves: 12 at 426 calories per serving. (Note) This recipe calls for the use of raw eggs. This is a known health hazard. When the calendar turns to February, we start to think of friendship, love and that special someone. For centuries February has been designated the month for lovers. The primary celebration this month being on February 14, St. Valentines Day. We send cards, flowers, and candy and our children give out Valentines in school. Valentine Salad
2 cups hot water 2 packages lemon Jell-O 1 (about 6-ounce) package red hots 2 cups applesauce 1 (8-ounce) cream cheese, softened 1/2 cup celery, chopped 1/2 cup nuts, chopped 1/2 cup salad dressing
In a large bowl dissolve the red hots in hot water. Add the Jell-O and stir until dissolved. Add the applesauce. Pour 1/2 of the Jell-O mixture into a mold. Chill until set. Prepare filling: In a mixing bowl, combine the cream cheese, celery, nuts and salad dressing. Mix well. Spread the filling over the Jell-O that has been set. Mock Filet Mignon
1-1/2 pound ground beef 2 cups minute rice, cooked 1 small onion, grated 2 tablespoons Worcestershire sauce Salt and pepper 1 clove garlic, grated Bacon 1 can cream of mushroom soup 1/2 cup milk
In a large bowl, combine the meat, rice, onion, sauce, salt, pepper and garlic. Mix well. Form into 8 patties. Wrap with the bacon and fasten with a toothpick. Bake at 450-degrees for 30 minutes. Hi Linda, Could you please ask everybody to say a prayer for my family? My husband lost his job a month ago and has been looking every day for a job, but so far has found nothing. We lost our health insurance, and I was only able to afford coverage for myself and our son on the insurance where I work. For all 3 of us, it's over $600 per month! We cut our son's daycare down from 5 days a week to 2 days to save money. We're going to cancel the cable soon and the phone won't be too far behind. You can make Fondue ahead of time and reheat by stirring in the top of a double boiler, just before serving. If you do not have kirsch or rum on hand you can substitute 1/2-cup orange juice with 1-tablespoon grated orange peel.
Chocolate Fondue
2 packages (6-ounce size) semisweet chocolate pieces 1 can (13-ounce) evaporated milk, undiluted 1/2 cup kirsch or rum
For dipping in Fondue: Apple slices, orange or tangerine sections, dates, seedless green grapes, pineapple chunks, marshmallows, squares of pound cake or angel food cake
In heavy saucepan, combine chocolate and milk. Cook over low heat, stirring constantly, until the chocolate is melted. Stir in the kirsch or rum; remove from heat. Valentine Fruit Punch
1 package Cherry Kool-Aid 1 package Strawberry Kool-Aid 2 cups sugar 2 quarts water 4 cups Vodka 6 ounces Orange juice concentrate 6 ounces Pink Lemonade concentrate 1 quart Ginger ale
In a large punch bowl combine the Kool-Aids, sugar, Vodka and water. Add the juice concentrates; mix until thawed. Add the ginger ale just before serving. Serves: 25 at 3/4-cup servings.

2 cups grape juice, chilled 4 cups orange juice, chilled 8 cups ginger ale 1/4 cup sugar 2 oranges

Vegetable cooking spray 1 large clove garlic, minced 1 scallion, white part and 2-inches green, chopped 1/2 pound young green beans, ends trimmed 8 ounce button mushrooms, sliced 1/4 pound bean sprouts 1 teaspoon balsamic vinegar Freshly ground pepper
Lightly coat a nonstick skillet with cooking spray. Add the garlic and scallion. Stir-fry for 1 minute. Add the beans and mushrooms. Stir-fry until mushrooms are almost cooked through. Add the bean sprouts and vinegar. Stir-fry just until the bean sprouts are hot. Valentines Day was originally created as a substitute. In the fifth century A.D., the Catholic Church attempted to be rid of a common pagan fertility rite that the Romans had been taking part in since the fourth century B.C. Every year the Romans celebrated a young man's rite of passage to the god Lupercus by holding a lottery in mid-February. The names of willing teenage girls were placed in a box and drawn at random by teenage men. By this lottery a young man was assigned a young woman companion for their mutual pleasure (often sexual) for the duration of a year. After the year was up another lottery was held. As Christianity spread and the leaders of the Church resolved to do away with this practice by picking a "lover's" saint to replace the god Lupercus. They picked Valentine, a bishop who had been martyred in the third century A.D. for the cause of love.

Beef in Wine Sauce
1 pound stew beef, cut into 1-inch cubes 2 tablespoons dry onion soup mix 1 (7-1/2 ounce can cream of mushroom soup 2 tablespoons dry red wine 1 tablespoon quick cooking tapioca (optional)

In 270 A.D. Emperor Claudius had issued an edict forbidding marriage because believed that married men made poor soldiers, not wanting to leave their families to go to battle. Valentine, bishop of Interamna, disagreed with the emperor and invited young lovers to come to him in secret to be married. When Claudius found that he was performing secret marriage ceremonies, he was incensed. He had Valentine seized and brought before him. When Valentine refused to change his views and renounce Christianity, he was put in prison to await execution. In February of 270, Valentine was clubbed, stoned, and then beheaded.

Lobster Thermidor
1 stick margarine 1/2 cup flour, sifted 3 cups light cream 2 tablespoons dry Sherry 1/4 teaspoon dry mustard Dash of cayenne pepper 1 (8-ounce) can mushrooms, sliced 3 cups lobster, cooked & cubed Parmesan cheese Paprika
Place margarine in 4-cup glass measure. Microwave on High for 1 minute or until melted. Stir in the flour; blend well. Microwave on High for 1 minute. Add the cream slowly; blend well. Microwave on High for 6 to 8 minutes, stirring occasionally until thickened. Add the Sherry, mustard, pepper, mushrooms, lobster and 1/4-cup Parmesan cheese. Microwave on High for and additional 6 minutes. Sprinkle with paprika and additional cheese on top before serving. Serve over rice in patty shells. Approximately 30 minutes before serving, in a 12-inch skillet (at least 2" deep) over medium- high heat, in 2-tablespoons hot vegetable oil, cook the peppers and onion until tender and golden, approximately 15 minutes, stirring occasionally. Remove the pepper mixture to bowl. Meanwhile in a saucepan, prepare the noodles per label directions, using 2-teaspoons salt in water. Drain the noodles. On waxed paper, combine the paprika and flour; use to coat the chicken. In the same skillet over medium-high heat in 1-tablespoon hot vegetable oil, cook the chicken until just beginning to brown, approximately 2 to 3 minutes. Add the bouillon, 1-cup water and 3/4-teaspoons salt; heat to boiling. Reduce heat to low; cover and simmer until the chicken loses its pink color throughout, approximately 8 to 10 minutes. Stir in the sour cream and pepper mixture, heat through but do not boil or mixture may curdle. In A.D. 496, Pope Gelasius outlawed the Lupercian festival, but cleverly retained the lottery, because he was aware of the Roman's love for games of chance. But now instead of names of women in the box, there were placed names of saints. Men and women both picked slips of paper and for the upcoming year they were expected to imitate the life of the saint whose name they had drawn. And St. Valentine was advanced as the overseer of the whole thing. It took some time for this new tradition to take hold, but eventually, more and more Romans relinquished the Lupercian festival and replaced it with St. Valentines Day.

Chocolate Truffles
10 ounces semisweet chocolate 3 egg yolks 3-1/2 tablespoons heavy cream 2-1/2 tablespoons anisette liqueur 2 ounces unsalted butter, softened Cocoa, for dusting
In the top of a double boiler, melt the chocolate over simmering water. Remove from heat and add the egg yolks. Whisk until smooth. Add the cream, a tablespoon at a time. Whisk until smooth. Add the anisette and whisk until smooth. Place back over hot water to heat through. When warm, whisk in the butter, a tablespoon at a time. Refrigerate until firm. Traditionally, mainly due to the Lupercian lottery, mid-February was a Roman time to meet and court prospective mates. While the Lupercian lottery was replaced, most Roman young men were not totally satisfied with the lottery of saints' names and the new lottery did not last long. 4 eggs 1 cup heavy whipping cream 6 ounce crab meat Dash nutmeg 1 cup Swiss cheese, grated
Preheat the oven to 350-degrees. Grease an 8-inch quiche pan or a 9-inch pie pan with butter or cooking spray. In a small bowl beat the eggs. Valentines Day Candy House
Get your family together and make these adorable Valentines Day houses.
Each person will need the following: a sturdy paper plate to sit their house on, a small square box such as a pint size milk or juice carton enough graham crackers to cover their boxes
Everyone will need easy access to the following: Melted white chocolate to use for glue Arrangement of bowls of candies and other edible decorations such as: Conversation hearts, chocolate kisses, pretzels, red, pink & white sprinkles, colored sugars, red hots, coconut,
How to Put the House Together: Simply paint the crackers and the box with the melted white chocolate and put the crackers where you want them on the house in order to cover it. For the roof it is easier to just lay the graham cracker down flat instead of trying to angle 2 together for the roof.
Then use the melted chocolate to adhere the candies to the house. Sprinkle with powdered sugar for a frosting of light snow.

Filet Mignon with Cognac
4 tablespoons butter 2 tablespoons shallots, finely chopped 1 tablespoon Worcestershire sauce 2 (6-ounce) filets mignons 2 ounces Cognac
In a large skillet, heat 2-tablespoons oil. Add the shallots, sauté over medium heat for 5 minutes. Turn heat to high, add the Worcestershire sauce. Add the filets. Cook the filets for 3 minutes on each side, turning once for slightly rare. Transfer the filets to a warm dish. Deglaze pan with Cognac and ignite with a match. Remove pan from heat, swirl in the remaining butter to thicken the sauce. Pour over the filets. Serve at once. I hope you are having a wonderful week. Sorry I have not been publishing lately. We have been swamped between the runny noses, tummy aches and running here and there trying to get things done. The kids seem on the mend. They still have a stuffy nose but nobody has complained of a tummy ache today. What a relief! Other that that we have just been extremely busy with life. Amazing how that happens when you least expect it. One day you feel like you have done nothing and the next, Wow! And speaking of busy, I better get going. It is almost time to start supper so I can get Samantha to Brownies tonight.

Chicken Diane
6 boneless, skinless chicken thighs or breast halves 1/4 cup butter 1 medium onion, chopped fine 1/3 cup fresh parsley 1/4 cup steak sauce 1/4 cup dry sherry 1 tablespoon Worcestershire sauce 1 tablespoon Dijon-style mustard
In a large skillet, heat half of the butter over medium heat until bubbly and hot. Add the chicken and cook, turning frequently until lightly browned on all sides and, when pierced with a fork, juices run clear. Remove the chicken to a warm plate and keep warm. In the same skillet, heat the remaining butter. Add the onion and sauté until translucent, approximately 2 minutes or less. Reduce the heat and add the remaining ingredients, except for the chicken. Cook; stirring occasionally; until heated through. Easy Valentine Cheesecake
Graham cracker pie shell 1 can cherry or strawberry fruit pie filling or topping 8 ounce cream cheese, softened 8 ounce non-dairy whipped topping 1/4 cup powdered sugar

Raisin Whole Wheat Bread
2 cups all purpose flour 1-1/2 cups whole wheat flour 1 tablespoon baking powder 3 tablespoons granulated brown sugar 2 teaspoons caraway seeds 1/2 teaspoon salt 3 tablespoons golden raisins, chopped One 12 ounce can light beer, at room temperature 1/4 cup egg substitute Vegetable cooking spray
In a large mixing bowl combine the first 7 ingredients, make a well in the center of the mixture. Add the beer and egg substitute, stirring until the dry ingredients are moistened. Spoon the batter into a 8-1/2 x 4-1/2 x 3-inch loaf pan coated with nonstick cooking spray. Bake at 375-degrees for 45 to 50 minutes or until a toothpick inserted into the center comes out clean. This recipe makes a wonderful Valentines salad.
Valentine Fruit Salad
1 can pears 1/2 cup cinnamon red hots 3 tablespoons vinegar Lettuce 1 can sliced pineapple 1/2 cup nuts, chopped 1-1/2 cups cream mayonnaise, recipe below
Drain the pears, to pear syrup add the cinnamon red hots and vinegar, bring to a boil. Trim each pear half into heart shape and simmer in the syrup 20 minutes, remove from heat and refrigerate. Place pear half, hollow side down, on a lettuce leaf. Cut the pineapple in small sections and arrange around pears. Sprinkle the nuts around the edge of the salad to give a lacy effect. Serve the mayonnaise in a separate bowl.

Baked Pork Chops
2 to 4 center cut boneless chops 1/2 cup Italian-style salad dressing or cooking oil 1 cup bread crumbs Salt and pepper to taste
Place the salad dressing or oil in a small flat dish. Place the bread crumbs in another flat dish. Dip both sides of the pork chops into the dressing or oil. Coat the pork chops on both sides with the crumb, salt and pepper mixture. Place the coated pork chops into an oven proof glass pan. Hi, Just wanted to stop by and ask you to please pray for a friend of mine. I just learned that the fiancée of my friend, Allison Bunton, was shot while on duty at the elections in Iraq. He was shot by sniper fire and got shot in the leg, has had surgery and is in the hospital over there. We are not sure just when he may be able to get home, but Please, Please offer your prayers up for his safety. We were all terribly upset to hear this news, he was due to be coming home in just over a month. He and Allison were planning to be married and start their life together. That will still happen, but its joy has been over shadowed by this tragedy. Thank you for your prayers....KT

Swiss Spread
1 (8-ounce) cream cheese, softened 1 cup Swiss cheese, shredded 4 crisp slices bacon or equal amount bacon bits 2 tablespoons green onions, minced 1 teaspoon Worcestershire sauce 2 tablespoons milk

Mango-Papaya Smoothie
1 mango (about 1-1/2 pounds), peeled, pitted, and chopped coarse 1 papaya, peeled, seeded, and chopped coarse 2 cups plain yogurt 2 tablespoons fresh Lime Juice plus 4 Lime slices for garnish 3 tablespoons honey, or to taste 1/4 teaspoon almond extract
Blend the mango, papaya, yogurt, lime juice, honey, almond extract and 1-cup ice cubes in in a blender container in batches until the mixture is smooth. Blend in another 1/2-cup ice cubes if desired to thin the smoothie mixture to desired consistency. Divide the mixture among 4 chilled large glasses and garnish each smoothie with a lime slice. Glazed Carrots and Onions
3 bouillon cubes, chicken or beef 6 medium carrots, scraped and cut into quarters 12 small onions, peeled or 4 medium onions sliced 1/4 cup butter or margarine 1 tablespoon sugar 2 tablespoons parsley or fresh basil, chopped
In a large saucepan combine 2 of the bouillon cubes with the carrots. Add boiling water to cover; stir to dissolve the bouillon. Cover. Cook for 10 minutes. Add the onions and cook for an additional 6 minutes or until vegetables are just tender. Remove from heat and drain. In a large skillet, melt the butter. Chicken Lickin' Good Pork Chops
6 pork chops, 1-inch thick 1/2 cup flour 1 tablespoon salt 1-1/2 teaspoons dry mustard 1/2 teaspoon garlic powder 2 tablespoons oil 1 can Chicken & Rice soup

2 medium zucchinis, sliced thin 2 medium yellow squash, sliced thin 1 green pepper, sliced thin 1 sweet red pepper, sliced thin 1 can diced tomatoes, drained or 2 medium tomatoes 1 small eggplant, sliced thin 1 medium onion, sliced thin 2 cloves garlic 1 teaspoon parsley 1 teaspoon basil 1/8 cup olive oil 1/4 cup Parmesan cheese
In a bowl combine the onions, olive oil, garlic, and herbs. Mix well. Spread half of the mixture in shallow microwave-safe casserole dish. Layer 1/2 of veggies on top of onion mixture. Sprinkle 1/2 of Parmesan cheese on top. Repeat layering, using the other half of the ingredients. Microwave loosely covered for 10 to 15 minutes, then check for doneness. If required, microwave more. Curried Turkey and Biscuits
5 biscuits, prepared from refrigerator dough 1 tablespoon margarine 1 red onion, sliced 1/2 cup mushrooms 1 (10.5 ounce) can of cream of mushroom soup, condensed 1 teaspoon curry powder 1/2 cup sour cream 2-1/2 cups turkey, cubed 1/4 cup parsley, chopped
Prepare the biscuits according to the package directions. In a large skillet over medium heat, melt the margarine and sauté the onions and sliced mushrooms. Stir in the soup, curry powder and sour cream to make a smooth sauce. Add the turkey chunks and the chopped parsley. Continue to simmer until completely heated. Serve over the biscuits. Easy Chocolate Chip Cookies
1 (12-ounce) package of chocolate chips 3/4 cup white sugar 3/4 cup brown sugar firmly packed 1 cup butter or margarine, softened 2 eggs 1 teaspoon vanilla extract 3-3/4 cups off brand pancake mix
Preheat the oven to 375-degrees. In a large bowl combine the brown sugar, white sugar, eggs, butter or margarine and vanilla mix until creamy. Add the pancake mix 1/2-cup at a time until very thick. Stir in the chocolate chips. Drop by spoonfuls onto greased cookie sheet. 1/3 cup full-fat soy flour 2 cups cottage cheese 1 tablespoon oil 8 eggs 1/3 cup vanilla protein powder 1 tablespoon vanilla 1 teaspoon nutmeg 1 teaspoon cinnamon 3 packets Splenda

Bread Food Coloring Sugar
